Summer calls for s'mores, swimming and sleeping in. One fun way to make breakfast more fun and special during the summer is by giving it a theme! These watermelon waffle pops are so easy to make and for once, I can almost guarantee kiddos will want to eat the watermelon seeds (chocolate chips :)).
These waffles are great not only because they're fun and tasty, but you only need a few things to make them and can use a waffle/pancake mix because between practices, swim lessons and running out the back door to play you don't always have time to make the mix from scratch.

Ingredients
- waffle mix- your favorite is great! I like the Kodiak Cakes one because of the extra protein.
- Chocolate chips for toppings
- Red and green food coloring. I do recommend using gel food coloring because you can get vibrant colors without adding a ton!
- If you're going to make them into waffle pops you'll want to have some popsicle sticks handy too.
Directions
- Make your waffle mix and split into two bowls. You'll want a smaller amount for the 'rind' and more for the center.
- Add your green and red food coloring to their respective bowls.
- Using a dinner spoon add green waffle mix to the edge of the waffle maker, going around the whole waffle maker to make a circle.
- Fill the inside with the red waffle mix.
- Close the waffle maker and allow to set for about 30-45 seconds.
- Open the waffle maker and add your chocolate chips into the indentions. I found this makes it look more like watermelon 'seeds' and the chocolate chips don't all clump together.
- Remove waffle from maker and cut into slices.
- *Optional* to make into waffle pops, take a popsicle stick and slide into a 'watermelon slice'. This is easiest when the waffle is still warm.
- Serve with butter and maple syrup.
How to Store the Waffles
When making a batch of waffles I like to make the whole mix and divide them into stasher bags. Then I can pull them out of the freezer and pop into the toaster to serve. These will stay fresh for a day or so in an airtight container, and in the freezer for about a month.
FAQ
To use pancake mix for making waffles you'll want to add oil to the mix.
Serve immediately or add to a stasher (or ziploc) bag and put in the freezer.
