The Easiest Funfetti Cake Mix Cookies

Combining a cookie and a cake sounds dreamy, and it's so simple! Make these funfetti cake mix cookies with only 3 ingredients and within 20 minutes. It might take longer to preheat your oven than to make these cake batter cookies. These cookies are perfect for any celebration or birthday party and you can customize them with your frosting color and sprinkles. They're easy to whip up for potlucks or holidays and never disappoint a crowd.

All you need is a box mix in your flavor of choice, I used and recommend the funfetti cake mix. It comes with sprinkles and is just a perfect confetti cake flavor. Add eggs and oil and they're ready to go in the oven! Using cake batter with a few tweaks to turn them into cookies makes the doughiest, softest cookie.

Ingredients

  • 1 Funfetti Cake box mix
  • ⅓ cup oil (I used vegetable, the oil will have an impact on the taste.)
  • 2 eggs

Directions

  1. Preheat your oven to 350° F.
  2. Add your cake mix, eggs and oil into a mixing bowl. Stir to combine.
  3. Once combined, roll into tablespoon sized balls and drop onto a baking sheet, you'll have about a dozen cookie balls. I use a piece of parchment paper for less cleanup.
  4. Bake for 7-9 minutes. They will finish baking on the sheet a bit, you want to remove them from the oven when the top is cracking and you're just starting to see the bottom of the cookie turn golden.
  5. Allow to cool, then top with frosting and sprinkles. Put the rest of the can of frosting in the fridge and save to make cake pops!

Tips

  • Use parchment paper for easy clean-up.
  • Cake batter cookies are softer than other cookies, but watch them carefully in the oven so you don't overbake.
  • Add your own sprinkles or pick a mix so you can color coordinate for any party.
  • These are great for birthday parties, or for easy holiday parties!
  • Kiddos can definitely help make these and learn about baking while working on them.
  • Use a tablespoon to test the size of your cookie dough before dropping it onto the baking sheet.

Storage

Store these cookies in an airtight container for 5-7 days. If you freeze them, freeze them without frosting. Remove from the freezer and allow to thaw in the refrigerator, then add your frosting and sprinkles.
