Watermelon Waffle Pops

Make these watermelon waffle pops for a fun twist on your summer breakfast. These are easy to make and you can use your favorite box mix for convenience.

Equipment

  • 1 waffle maker
  • 2 bowls
  • measuring cups
  • popsicle sticks

Ingredients
  

  • box waffle or pancake mix
  • water follow box mix instructions
  • oil follow box mix instructions
  • 2-3 drops red food coloring gel recommended
  • 1-2 drops green food coloring gel recommended
  • ¼ cup chocolate chips

Instructions
 

  • Make your waffle mix and split into two bowls. You'll want a smaller amount for the 'rind' and more for the center.
  • Add your green and red food coloring to their respective bowls. Stir to combine and until desired color is reached.
  • Using a dinner spoon add green waffle mix to the edge of the waffle maker, going around the whole waffle maker to make a circle.
  • Fill the inside with the red waffle mix. Close the waffle maker and allow to set for about 30-45 seconds.
  • Open the waffle maker and add your chocolate chips into the indentions. I found this makes it look more like watermelon 'seeds' and the chocolate chips don't all clump together.
  • Once finished cooking, remove waffle from maker and cut into slices. Serve with butter and maple syrup.
  • *Optional* to make into waffle pops, take a popsicle stick and slide into a 'watermelon slice'. This is easiest when the waffle is still warm.
