Make your waffle mix and split into two bowls. You'll want a smaller amount for the 'rind' and more for the center.
Add your green and red food coloring to their respective bowls. Stir to combine and until desired color is reached.
Using a dinner spoon add green waffle mix to the edge of the waffle maker, going around the whole waffle maker to make a circle.
Fill the inside with the red waffle mix. Close the waffle maker and allow to set for about 30-45 seconds.
Open the waffle maker and add your chocolate chips into the indentions. I found this makes it look more like watermelon 'seeds' and the chocolate chips don't all clump together.
Once finished cooking, remove waffle from maker and cut into slices. Serve with butter and maple syrup.
*Optional* to make into waffle pops, take a popsicle stick and slide into a 'watermelon slice'. This is easiest when the waffle is still warm.
