Rocket Pop Popsicle Recipe!

This easy, healthy and kid friendly rocket pop popsicle will be a family hit for any of 4th of July parties or summer snack time!

Equipment

  • blender
  • mesh strainer
  • Popsicle mold
  • 10 Wooden Popsicle Sticks (or reusable ones)

Ingredients
  

  • 1 package Strawberries
  • 1 package blueberries
  • 6 limes
  • 1 lemon
  • 5 teaspoon honey
  • 1 ¼ cup water

Instructions
 

  • wash the fruit and cut the green leafy tops off the strawberries
  • put the strawberries, ¼ cup water, 1 teaspoon honey, and the juice of ½ a lemon into a blender and blend til smooth
  • strain the strawberry mixture through a mesh strainer and discard the seeds
  • pour the strawberry mixture into the popsicle mold, feel each cavity ⅓ full.
  • place 1 popsicle stick into each cavity
  • place the mold in the freezer and freeze fully, around 2 hours.
  • while the strawberry layer is freezing, juice all 6 limes
  • put the lime juice, ⅓ cup water, and 2 teaspoon of honey into the blender and blend well
  • once the first layer is completely frozen, take the mold out of the freezer and fill each cavity another ⅓ with the lime mixture
  • return the mold to the freezer and allow the second layer to freeze over fully
  • while the second layer is freezing, put the blueberries, ½ cup water, 2 teaspoon honey, and the juice from ½ a lemon into the blender and blend until smooth
  • strain the blueberry mixture through a mesh strainer
  • once the second layer is completely frozen over, take the mold out of the freezer and fill the final ⅓ of each cavity with the blueberry mixture
  • allow the final layer to freeze fully and then ENJOY!!

Notes

feel free to add more or less honey to taste!
